I still remember my first trip to Wisconsin. Every style of cheese is made here, and the breadth and depth of cheesemaking knowledge is astounding. In Wisconsin you experience the direct connection between 19th century Swiss German immigrants and the food culture of today.

1
Arrive in Madison; explore the country’s largest producer-only farmers’ market; raise a glass in welcome.

2
Visit one of the only grass-based, seasonal cheese dairies in America followed by a cheese-centric lunch with the maker. From there? A private tour of Frank Lloyd Wright’s stupendous Taliesan.

Experience the Swiss influence on American cheesemaking via Wisconsin. We’ll visit a teeny tiny clothbound Cheddar maker, then lunch and cheese tasting at a state of the art Alpine cheese producer. For dinner? All the Wisconsin classics, from fried curds to poutine to Limburger sandwiches.

We’re off to Milwaukee and a creamery and farm tour at an award-winning farmstead goat cheese maker. Then, a custom 5 course cheese dinner with an old chef friend.

We’ll ease into our last day with a private tour of the Milwaukee Art Museum, followed by a cheese tasting inspired by the Museum’s European collection. Then, some personal time to wander the city. We’ll reconvene for a private brewery tour and beer and cheese pairing and then we’re off to a raclette speakeasy for a last communal dinner to toast our adventures in cheese.
